Even better, this is a low carb snack or dessert bar that does not have to be baked.

You simply combine the ingredients and transfer it to the pan.
Then we will the bars top with a tasty ganache layer.

Raw eggs that have not been pasteurized have been linked to salmonella.
Thus, eating cookie dough that contains raw eggs can cause issues.

However, this recipe does not contain raw eggs.

I should also mention that this recipe does not contain all purpose flour.
Raw, uncooked or baked, all purpose flour can also make us sick, according to the experts.

Here are some tips for making no bake cookie dough bars.

As mentioned above, this recipe does not contain all purpose flour but instead, this recipe calls for blanched almond flour. You could however use almond meal if you prefer a more gritty texture.

Here are some more helpful tips.

  1. This recipe calls for vegan butter. The simplest choice for keto folks is coconut oil. However, combining this with or using unsweetened peanut (or another nut butter) can be a more flavorful choice. I have a recipe for how to make your own sugar free peanut butter that you can use.
  2. Using a square pan ( 9 by 9") is the suggested pan size to use. However, a smaller pan, such as 8 by 8", will give you a thicker bar. Also, using parchment paper that overlaps the edges of the pan will make it easier for you to remove the bars for cutting.
  3. Placing the dough in the refrigerator for a half hour (or cheat, freezer for 15 minutes) is a good way to get the dough ready for the warm ganache topping. You can do this while you are preparing the ganache topping.

You may be wondering how long do no bake cookies stay good?

Let me first mention that these no bake cookie dough bars should be stored in an airtight container and if in layers, use wax or parchment paper between the layers. I prefer to store my bars in the fridge (seven to 10 days) or freeze them.

This is a sugar free recipe that has no eggs or flour added to it.
As mentioned above, this recipe calls for blanched almond flour. You could however use almond meal if you prefer a more gritty texture.

This recipe also calls for sugar free keto maple syrup.

Feel free to sub in another sugar free liquid sugar alternative that measures the same (or adjust as needed). Vegan only folks are welcome to use regular maple syrup instead.

Feel free to adjust the ingredient amounts as needed. You may prefer a more dough-like bars which may mean that you could add additional almond flour or a tablespoon or two of coconut flour.

How to make keto low carb sugar free cookie dough bars.

  • Prepare a square baking dish with parchment paper that overhangs the edges of the pan. Using a smaller baking dish (6 X 6) will yield a taller cookie bar.
  • In a medium mixing bowl, blend together the butter (or alternative), syrup (or alternative), and the vanilla extract until creamy.
  • Stir in the almond flour until combined. Add salt as needed and adjust as needed as well (flour or butter). Then fold in one half cup of the chocolate chips.
  • Transfer the mixture to the prepared baking dish, pressing in the batter as needed. Then place bars into the refrigerator while you prepare the ganache.
  • Melt the remaining chocolate chips. Place the chocolate chips in a microwave-safe bowl and microwave on high until melted, stopping to stir every thirty seconds. Optionally, you can use a double boiler stove method. Once melted, you can stir in the remaining coconut oil.
  • Take the cookie bars out of the refrigerator and top it with the ganache mixture. Allow this to sit at room temperature for five minutes and then return to the refrigerator until set. Cut into bars and serve.
